Little Noodles are made with eggs, flour and milk. They are usually cut into small or even smaller pieces, but there are many who make them "spaghetti" and thus look like Italian tagliatelle. Traditionally, after cutting, they are spread on sheets and left to dry for 2-3 days, mixing them here and there. Today, of course, their manufacturers use more modern means both for their preparation and cutting as well as for their drying.
