Frumenty is a pasta made from flour, water, milk and egg and has a grainy and irregular shape. The grains are about 2-3 mm in diameter. It is available in different varieties: sour and sweet, thick and thin. The sour frumenty is fermented with yogurt.
Frumenty is cooked as a soup either with enough water or thicker. The cooking time of trachana is usually short, about 15-20 minutes. Sometimes it is cooked with tomatoes.
During the preparation of frumenty , the last stage is its drying. To do this, the frumenty is spread to have the maximum possible surface. This process, the spreading of frumenty, has remained as a popular expression, referring to someone who is typically late.
